Shopping Pork At Costco | Recipe and Giveaway

Remember earlier this week I told you I would be creating a recipe for a rack of pork? Well first let me tell you that my shopping trip to town to go to Costco was fun. I love that place and I truly feel like a kid in a candy store walking into the big warehouse, usually stopping every few feet to throw something in the cart. For this trip we made a beeline for the meat department and then we hit the spice aisle. We found the perfect Rack of Pork and I must say that price per pound was great! (don’t forget that you can get $2.50 off a package in stores through October 31) Next we hit the spice aisle for all the spices I needed to create the “Spiced Packed Pork Rack”, and packed it was. I can’t even tell you how amazing it turned out, pictures can’t add the aroma of the rack cooking and the juiciness of the meat when served. This was the perfect cut of pork for my small dinner party, where we ate good, played games and in general just relaxed. Perfect meal, perfect day!

Spice Packed Pork Rack

Ingredients:

1 Rack of Pork (6-8 ribs is good) (I also left the meat and fat on upper bones hubby says he likes it that way)
1/2 tsp. Salt
1/4 tsp. Garlic Salt
1/4 tsp. Garlic Powder
1/4 tsp. Pepper (fresh cracked and I “eye” it)
1 dash of Cayenne Pepper
1 dash Chili Powder
2 tsp. Oregano (dry)
1/4 tsp. Allspice
Olive Oil (for brushing on rack)

Preheat oven to 450 degrees. Mix all spices together in a medium sized bowl. Brush oil onto rack and coat with spice mixture, working it into the meat gently. Place in baking dish and bake at 450 degrees for 10 minutes, turn down temperature to 350 degrees and cook for another 90 minutes, checking middle temp at the 75 minute mark. Remove from oven and let sit for 10 minutes. Serve with Stir fry peppers and Jasmine rice.

I also drizzled the juices in the bottom of the pan all over the rack before cutting for that extra flavor.

And I love spices and put them in and on everything, you can leave out or add any spice you want I drew the line at cinnamon, but who knows, it may taste awesome ;)

Pork Tips

Temperature – Pork today is very lean and shouldn’t be overcooked. To check doneness, use a digital cooking thermometer. The National Pork Board follows the guidance of the U.S. Department of Agriculture, which recommends cooking roasts, tenderloins, and chops to an internal temperature of 145 degrees F., followed by a 3 minute rest time, resulting in a flavorful, tender and juicy eating experience. Ground pork, like all ground meat, should be cooked to 160 degrees F. Pre-cooked ham can be reheated to 140 degrees F. or enjoyed cold.
